Authentic South African Sweet Sticky Malva Pudding Recipe

The Dutch brought with them their love for sweet and indulgent desserts, and malva pudding is believed to be a variation of the Dutch dessert, "malvapoeding," which translates to "marshmallow pudding." This dessert was typically made with apricot jam and served with a custard sauce.
Malva pudding gained popularity in the 1970s when it was featured in a popular South African cookbook, "Cook and Enjoy," by S.J.A de Villiers. The recipe was simple and easy to make, making it a favorite among home cooks.
Today, malva pudding is considered a quintessential South African dessert and is often served at special occasions such as weddings, birthdays, and holidays. It has also gained international recognition and is now enjoyed in many countries around the world.

Pre-heat the oven to 350 F (180 C) and grease your baking dish (8"x12").

We will start by heating the butter in a small pan over medium heat, stirring occasionally. As the butter melts, it will start to foam and sizzle.

Grab a large mixing bowl, add the sugar and eggs - then beat them with your whisk (hand held or electric) until fluffy. Then add the apricot jam and beat until smooth.

Add in the browned butter, milk and apple cider vinegar mixture then add salt - beat until combined.

Add in baking soda and baking powder, miss until just combined. Then add in the flour 1/4 cup at a time while mixing the mixture together. Do not over mix.

Once all ingredients have come together, pour batter into the greased baking dish and bake for 40-55 minutes - remove once the cake has turned a deep amber brown similar to molasses.

Once the pudding has been baking for 30 minutes, grab a pot and melt the butter. Then add the sugar and mix until dissolved. Now add the heavy cream and water then simmer the glaze for 3 minutes.

After 40 minutes in the oven, check the pudding every 5 minutes to monitor the color. Once it is done, remove from oven and poke holes in the cake with a large skewer or chopstick. Then gently pour the glaze over the hot pudding in small amounts so that the cake absorbs the mixture well throughout.

Serve either warm or chilled with a side of homemade custard or whipped cream (or both!).

1/2 cup Whole Milk
1 Tbs Apple Cider Vinegar
1 cup Brown Sugar
2 extra Large Eggs
2 Tbs Apricot Jam (smooth)
1/8 tsp Salt
1 tsp Baking Soda
1 tsp Baking Powder
1 1/4 cup Flour
1/4 cup brandy
For The Pudding
1/4 cup brandy
1/2 cup Butter
1/2 cup Brown Sugar
1 cup Heavy Whipping Cream
For The Glaze
